Ingredients:
Fresh Tortellini - 20 oz
Turkey Sausage (14 oz) cut into half round slices
Medium Yellow Onions - 2
Garlic - 5 cloves
Zucchini cut into quarter slices - 2
Sliced Mushrooms - 1 lb
Broccoli cut into small pieces - 1 lb
Arugula - to top
Parmesan cheese - roughly 1 oz
Olive Garden Light Italian Dressing - ½ bottle
Salt, garlic powder, MSG (to taste)
Oil (I prefer Beef Tallow)
Directions:
Turn on 3 of 4 burners and preheat to 400 degrees.
Start with the tortellini. Coating it in oil and steaming with a bit of water for 3-4 minutes until heated. Next, Move to corner of griddle that is off
Add in the sausage and begin to brown. About 1-2 minutes.
Add in the zucchini, onions, and broccoli. After 1-2 minutes, add in the mushrooms and garlic. Cool for a total of about 5 min. Try and keep the vegetables with a bite.
Add back in the tortellini and Mix everything together.
Top with the Italian dressing and continue to mix
After 30-45 seconds, it’s ready to be pulled off and topped with Parmesan cheese and arugula.
Notes:
This was portioned out into 5 meals of about 610 calories each.
This is great for random veggies you have in the fridge. Just about anything you would use in a stir fry would be good here.
A garlic & herb marinade/sauce would be good for this as well. You can get weird with the sauce choice.
Chicken would work great for this dish in place of the sausage.
